An afternoon at a dairy that has been making mozzarella and cheeses for more than fifty years, a few minutes from the centre of Naples. You follow every stage of the process, from heating the curd to stretching it, and try pulling the mozzarella apart with your own hands. Then you move out to a garden of lemon trees and roses to cook a southern Italian dish together and taste the house cheeses, a ricotta and lemon tiramisù and homemade limoncello.

Rione Alto metro station
You meet at Rione Alto metro station, easy to reach from the centre. From there it’s a five-minute drive to the dairy, which has been making mozzarella and traditional cheeses for over fifty years. The first part happens in the workshop: you watch how mozzarella is born, step by step, from heating to stretching, and everyone gets to pull it apart themselves.
Then you move into the garden, among lemon trees and roses. Together you prepare a typical southern Italian dish, taste the freshly made cheeses and finish with the house tiramisù, made with ricotta and fresh lemons, and a small glass of limoncello. Two and a half hours in all, with food and drinks included. You’re brought back to Rione Alto at the end.
For anyone who wants to see how mozzarella is really made and sit down to eat with the people who make it, well away from the tourist circuit. The venue is wheelchair accessible and there’s a small-group or private option. Less suited to anyone after a quick activity in the centre: you do have to get yourself to Rione Alto.
Local tip
Come hungry, because the meal is generous. The metro is the easiest way to reach the meeting point; a taxi back to your hotel isn’t included. Dates go quickly, so book a few days ahead.
