Two hours in a pizzeria on Via San Carlo, opposite the opera house, with an English-speaking pizzaiolo who gets your hands in the dough. It's not a demonstration: you make the dough yourself, starting from the flour, then slice the mozzarella and prepare the tomato. You eat what you've made, with bruschetta first and tiramisù after, drink included. Groups of up to fifteen.

The first part is theory and practice on the dough: the pizzaiolo explains the ingredients and the technique, then everyone kneads their own dough ball following his lead. Meanwhile the bruschetta arrives. Then on to the toppings: you slice the mozzarella and make the tomato sauce with fresh ingredients supplied by the pizzeria.
Next you stretch your pizza, it goes in the oven and you eat it in the pizzeria with a drink. The tiramisù, which shares top billing with the pizza, rounds off the meal. Two hours in all, in English. At the end you walk out onto Via San Carlo, with the theatre in front of you and Piazza del Plebiscito just round the corner.
Good if you speak English and want to learn dough from a real pizzaiolo, in a working pizzeria rather than a teaching kitchen. Suits couples, friends and families; two hours is manageable with children too. If you can't follow English, you'll miss the explanations. The location, opposite the San Carlo, makes it easy to fit into a day in the centre.
Local tip
Don't have lunch beforehand: bruschetta, pizza and tiramisù are plenty. The class is opposite Teatro San Carlo and a step from Galleria Umberto I and Piazza del Plebiscito: arrive a little early and have a wander. Wear clothes that can take some flour, and come with clean hands.
