Margherita or marinara: pizza-making class in a Naples pizzeria

Two hours in an old-town pizzeria on Via San Paolo to make your own margherita or marinara (tomato, garlic and oregano, no cheese) the proper way, with San Marzano tomatoes. The group is twelve people at most and the pizzaiolo takes you through every stage, from the dough to baking in the oven. What you’ll do

You meet on Via San Paolo, in the ancient centre, and go into the pizzeria where the class takes place. The pizzaiolo explains the ingredients and you start with the dough: you work it by hand, learn to stretch the base and choose between margherita and marinara. The group is small, twelve at most, so everyone has their own space and every question gets answered.

Then you top it with San Marzano tomatoes and move to the oven, where the pizzaiolo shows you how to slide it in and how long it takes. When the pizza is ready you sit down and eat it, with a drink included and an extra dish kept secret until that moment. About two hours in all, between work and table: you leave full, with flour still on your hands. If you want to make pizza again at home, you can ask the pizzaiolo everything about dough and baking, because with twelve people there’s time for each of you.
