Two hours in a real pizzeria in the centre to learn Neapolitan dough with four ingredients and fold a calzone properly, into a half-moon. Everyone has their own workstation, the master pizzaiolo teaches staglio, the technique for shaping dough balls, and at the end you eat your own savoury calzone with a glass of wine or beer, followed by a sweet calzone made from the same dough and filled with chocolate cream. You meet in Piazza Bovio and go into the pizzeria. You start with the basics: water, flour, salt and yeast, and how those four ingredients become an elastic dough. The pizzaiolo shows the kneading, explains the rising and teaches staglio, the technique for dividing the dough into round, even balls. Everyone works at their own station.
When the dough is ready you stretch it and fill it with local produce: San Marzano tomatoes, smoked provola, ricotta, Neapolitan salame, basil, extra virgin olive oil and pepper. Then you learn to seal the edges to get the half-moon shape and it goes into the pizzeria's oven, where the calzone bakes in front of everyone.
You sit down at the table and eat your own calzone with a glass of wine, beer or water. You finish with little fried dough bites filled with chocolate cream and a limoncello. You leave with the digital recipe so you can make it all again at home. It lasts about two hours.
For couples, friends and families with children aged six and over: younger children aren't allowed in the work area or near the oven. Good if you want to take home a technique, not just a dinner, because you genuinely work the dough. Not suitable for anyone gluten intolerant. If you're short on time, it's done in two hours, meal included.
Local tip
Wear clothes that can take some flour and tie your hair back. Don't eat beforehand: savoury calzone, sweet calzone and wine make a full meal. Piazza Bovio is halfway between the port and the old town, so beforehand you can see Piazza Municipio and the Maschio Angioino castle, or afterwards walk up to Spaccanapoli. It often sells out, so book early.
