Three hours in the kitchen with a local chef on Via delle Zite, making two pastas and a dessert: fettuccine with Alfredo sauce, the butter and Parmigiano one, ricotta-filled ravioli with San Marzano tomato sauce, and tiramisù. You start from the ingredients, fresh ricotta and aged Parmigiano in hand, and finish at the table eating what you’ve made. There’s a diploma at the end.

The class opens with an introduction to the ingredients: fresh ricotta, aged Parmigiano, eggs and flour. It helps you understand why pasta turns out well or badly before you even touch it. Then you knead, roll out the sheet and cut the fettuccine, while the chef moves between the stations and straightens out anyone going off course.
The second pasta is ravioli: you make the ricotta filling, seal them one by one and put the San Marzano tomato sauce on. For the fettuccine you make the Alfredo sauce, with butter and Parmigiano. Meanwhile the tiramisù is assembled, as it needs its time in the fridge.
At the end you all eat together at the tables, with the chef sharing local stories and tips to take home. The tiramisù rounds it off. You leave with a certificate of participation. The class is designed for all levels, so nobody gets left behind, not even people who have never kneaded dough.
For families, couples and groups of friends, even large ones: groups go up to thirty people, so it’s the right choice if there are lots of you and you want to stay together. Local tip
Don’t eat beforehand: three hours later you leave with two pastas and a dessert inside you. Via delle Zite is right in the old town: beforehand, a walk along the decumani (the ancient Roman streets) and San Gregorio Armeno, a few minutes away on foot, fits in nicely. Comfortable clothes and short sleeves, as you roll out the pasta with your arms.
