Naples pasta class: fettuccine, ravioli and tiramisù with a chef

Three hours in a Neapolitan kitchen with a professional chef, learning two fresh pastas from scratch, fettuccine and ricotta-filled ravioli, plus a hand-whipped tiramisù. You start with eggs and flour, make a sauce with San Marzano DOP tomatoes, and at the end sit down to eat what you’ve made, with a glass of wine or a beer. What you’ll do

You arrive, put on an apron and hat, and start with a Neapolitan starter while the chef explains the family recipe. Then you knead: fresh eggs and flour, rolling the dough until it’s smooth and elastic, then cutting the fettuccine. Meanwhile the sauce is made with San Marzano tomatoes.

Second pasta, the ravioli: everyone rolls out their sheet, fills it with fresh ricotta and spices and seals their own by hand, one by one. Then it’s on to the tiramisù, with the mascarpone cream worked to the right consistency, the savoiardi (ladyfingers) dipped in coffee, the layers built up slowly and cocoa on top.

At the end everyone sits down with the chef and the other participants: fettuccine Alfredo, ravioli with tomato sauce and the tiramisù, with your chosen drink and unlimited water, finishing with a limoncello. Before you leave you get the recipes via a QR code on your personalised diploma, and a number to call for help when you try it at home.

Who it’s for

For anyone who has never made pasta at home and wants to go back with two real techniques, and for couples and families: it suits all ages, and under-18s must be accompanied by an adult. Classes run in Italian, English, French and Spanish. Less suited to anyone who just wants to eat without getting behind the counter.

Local tip

Wear comfortable clothes without bulky sleeves; your hands will be in the flour. Come hungry: you eat everything you make, starter included. Keep the diploma, as the QR code with the recipes really comes in handy when you want to make the ravioli again at home.
