The meeting point is Piazza Carità, in front of the church of San Liborio, and within fifteen minutes you're in Piazza Pignasecca. You open with the welcome spritz and a board of mozzarella and local cured meats. Then it's off to a historic bakery in the market for a Neapolitan tarallo (a savoury ring studded with almonds and pepper) still warm, and on through the stalls for pizza folded in four.

The fourth stop is the polpetta, a meatball cooked in ragù; the fifth is the cuoppo, a paper cone of mixed fried fish, eaten standing up the way it's done here. Each stop lasts about fifteen minutes, with short walks between stalls while the guide tells stories and legends behind the dishes. Six stops in all, in two hours.

You finish with a dessert of your choice, babà, sfogliatella or artisan gelato, with a limoncello or an espresso, just outside the market. There's a vegetarian version of the tour and a private option if you want the group to yourselves. If you have allergies or restrictions, say so in advance.
