Calzone and tiramisù class in Naples, wood-fired oven, small group

A three-hour class to make a Neapolitan calzone, not the usual round pizza, and a tiramisù with decaf coffee. You work the dough by hand, no rolling pin, fill and close the calzone, bake it in the wood-fired oven and then sit down to eat the lot with a drink. What you’ll do

You start with the tiramisù, so it can rest while you work on the rest: mascarpone cream, biscuits dipped in decaf coffee, layers and cocoa. The chef shows you how thick the cream should be and how to balance biscuits, cream and cocoa so the dessert holds its shape.

Then the dough: you knead, shape and stretch it all by hand, using the techniques of pizza makers. Instead of a disc, you make a calzone: you add the filling, fold it over and learn to seal the edges so nothing escapes while it bakes.

The calzone goes into the wood-fired oven and you watch it puff up and colour. Then to the table: the calzone fresh from the oven with a drink, alcoholic or not, water throughout and, to finish, the tiramisù, which has been resting in the meantime. You leave with the written recipes and a diploma.

Who it’s for

For anyone who has already done a pizza class and wants something different, or who doesn’t drink coffee: the tiramisù is decaf. Small group, time for questions. Under-18s only with a parent or guardian. Three hours standing at the counter, and no wheelchair access.

Local tip

Do it at lunch or dinner time and arrive hungry: calzone and tiramisù are filling. Dress for the kitchen, not for a night out, flour sticks. The meeting point is on Via delle Zite, a fifteen-minute walk from the central station and the Duomo: afterwards, the old town is just round the corner.
