What you’ll do

You arrive ten minutes early to register, put on an apron and hat and start with the dough: flour, water, yeast and salt worked into a ball. Meanwhile you make the sauce with San Marzano tomatoes. The pizzaiolo explains rising and proving, in other words why one Neapolitan pizza comes out soft and another doesn’t.

Then you stretch the base by hand, top it as a Margherita and bake it in the traditional Neapolitan oven. As soon as it comes out you eat it at the table, with a choice of red or white wine, beer or soft drinks. The second part is the gelato: you start from fresh ingredients and follow the process through to the end, with the techniques that set it apart from industrial ice cream.

You finish by tasting the freshly made gelato and receiving a pizzaiolo certificate with your name on it, along with the pizza and gelato recipes to try again at home. Two hours in all, the right length not to tire out little ones and to leave the rest of the day free.
