You start with an apron and hat, a Neapolitan starter to break the ice, and your hands in the dough: flour, water, salt and yeast worked into a ball. Then you prepare the San Marzano tomatoes for the sauce. Meanwhile the chef tells you where pizza and tiramisù come from, and corrects anyone kneading badly.
The most fun part is the stretching: widening the base with your fingers, getting it round, topping it and sliding it into the oven on the peel without dropping it. The crust puffs up in seconds before your eyes. In the meantime you layer up the tiramisù, with the final dusting of cocoa done your own way.
You sit down and eat your own pizza with a choice of soft drink, beer or a glass of wine, unlimited water, and the tiramisù with a taste of limoncello. At the end you leave with a certificate in your name, the recipes to make it all again at home and an instant photo with the chef.
